Food Truck Inspections
Mobile Food Truck Fire Safety Inspections
Food trucks operating in participating Idaho jurisdictions are required to obtain an annual Mobile Food Preparation Vehicle Fire Safety Inspection. To simplify this process, more than 20 local fire departments have partnered to recognize a single inspection and $45 permit. Once inspected and approved, your food truck can operate in any of the participating areas, including Boise, Meridian, Nampa, Caldwell, Eagle, Kuna, Twin Falls, and others.
Purpose
Food trucks that use cooking equipment producing heat, smoke, or grease-laden vapors present similar fire risks as traditional commercial kitchens. This inspection ensures your vehicle meets state and national fire safety standards, protecting both your workers and customers.
Before Scheduling Your Inspection
Please have the following ready:
- ✅ Central District Health inspection – completed and current (proof required).
- ✅ Fire extinguisher and hood system service –
- Fire extinguishers must be serviced annually.
- Hood suppression systems must be serviced and cleaned every six months.
- ✅ LP Gas (Propane) Safety – Trucks using propane must have a UL-listed LP Gas Leak Detector installed.
- ✅ Insurance – Some cities require proof of liability insurance for your unit.
Inspection Process
Contact your local Fire Department’s Fire Prevention Office to schedule your inspection.
- Inspections are typically conducted Monday through Friday, 8:00 a.m. – 5:00 p.m.
- Once approved, your inspection is valid for the calendar year (January 1 – December 31).
- Inspections and permits must be renewed annually.
What Inspectors Check

- Proper type and placement of fire extinguishers
- Commercial cooking hood and fire suppression systems
- Propane tank storage and safety
- Cooking area spacing and oil storage
- Generator safety and electrical setup
- Emergency exits and clear egress routes

Our shared goal is to help you operate safely and confidently across Idaho communities. Maintaining your equipment and following these standards ensures a safe environment for both employees and customers.
